1/2 cup Unsweetened shredded coconut
1/4 cup Favorite keto-friendly sweetener, such as erythritol
1/4 cup Butter, melted
2 Large eggs
1 teaspoon Vanilla extract
1/2 teaspoon Baking powder
1/4 teaspoon Salt
1/4 cup (Optional) Sugar-free dark chocolate chips


  1. Place a baking sheet on your oven’s 350°F (175°C) rack and preheat the oven.
  2. In a large mixing bowl, combine the almond flour, coconut flour, shredded coconut, erythritol, baking powder, and salt.
  3. Whisk the melted butter, eggs, and vanilla extract in a separate basin.

  6. Take spoonful’s of the dough and shape them into cookies. Place them on the prepared baking sheet, leaving some space between each cookie.
  7. Bake in the preheated oven for about 12-15 minutes or until the edges turn golden brown.
  8. Once taken out of the oven, the cookies should cool for a few minutes on the baking sheet before being moved to a wire rack to finish cooling.
