NO BAKE KETO CHOCOLATE PEANUT BUTTER BALLS

Ingredients
1 cup natural Peanut butter (sugar-free)
1/4 cup Coconut flour
1/4 cup Unsweetened cocoa powder
1/4 cup Powdered erythritol/keto-friendly sweetener
1/4 cup Melted coconut oil
1 teaspoon Vanilla extract
Pinch Salt
Optional: Chopped peanuts or shredded coconut for coating

Instructions:

  1. In a mixing bowl, combine the peanut butter, coconut flour, cocoa powder, powdered erythritol, melted coconut oil, vanilla extract, and salt. Stir the mixture until it is thoroughly incorporated and takes on the consistency of dough.
  2. Place the mixture in the refrigerator for about 10 minutes to firm up slightly.
  3. Remove the mixture from the refrigerator and shape it into small balls, about 1 inch in diameter.
  4. If desired, roll the balls in chopped peanuts or shredded coconut to coat the outside.
  5. Place the balls on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to allow them to set.
