Keto German Chocolate Cake Recipe

Ingredients:

For the Cake:

  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup coconut flour
  • 1/4 cup erythritol or your preferred keto-friendly sweetener
  • 1/4 cup unsweetened shredded coconut
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 4 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract

For the German Chocolate Frosting:

  • 1 cup unsweetened shredded coconut
  • 1/2 cup chopped pecans
  • 1/2 cup heavy cream
  • 1/4 cup erythritol
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. In a large bowl, whisk together the almond flour, cocoa powder, coconut flour, erythritol, shredded coconut, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs, then add the almond milk, melted coconut oil, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms.
  5. Smooth the tops of the cakes after dividing the batter evenly between the two prepared cake pans.
  6. Bake for 25-30 minutes in a preheated oven, or until a toothpick inserted into the centre of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and place them on a wire rack to cool completely.
  7. While the cakes are cooling, prepare the German Chocolate Frosting. In a saucepan, combine the shredded coconut, chopped pecans, heavy cream, erythritol, cocoa powder, coconut oil, and vanilla extract. Cook over medium heat, stirring frequently, until the mixture thickens, about 5-7 minutes. Remove from heat and let it cool.
  8. Once the cakes and frosting are both completely cooled, spread a generous amount of the frosting on top of one of the cake layers.
  9. Place the second cake layer on top and cover the entire cake with the remaining frosting.
