Ingredients:

  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup cocoa powder (unsweetened)
  • 1/4 cup powdered erythritol (or your preferred keto-friendly sweetener)
  • 1/4 cup coconut oil (melted)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 4 oz sugar-free dark chocolate (70% cocoa or higher)

Instructions:

  1. In a mixing bowl, combine the unsweetened shredded coconut, almond flour, cocoa powder, powdered erythritol, and salt. Mix vigorously until all of the dry ingredients are distributed evenly.
  2. Add the melted coconut oil and vanilla extract to the dry ingredients. Stir until a dough-like mixture forms.
  3. Line an 8×8 inch (20×20 cm) baking pan with parchment paper. Press the dough evenly into the pan’s bottom.
  4. In a microwave-safe bowl or using a double boiler, melt the sugar-free dark chocolate until smooth. Be careful not to overheat it.
