Keto Cheesy Beef & Broccoli Casserole

Ingredients:

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 3 cups fresh broccoli florets
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup heavy cream
  • 1/4 cup mayonnaise
  • 2 large eggs
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium-high heat until it’s browned. Make sure to break it apart as it cooks. Drain any excess fat.
  3. Add the chopped onion to the skillet and sauté it with the beef for a few minutes until it becomes translucent.
  4. Steam or blanch the broccoli florets until they’re tender but still slightly crisp. This can be done either in the microwave or on the hob.
  5. In a large mixing bowl, whisk together the heavy cream, mayonnaise, eggs, minced garlic, and dried oregano. Season with salt and pepper to taste.
  6. Add the cooked ground beef and onion mixture to the bowl with the egg and cream mixture. Mix well to combine.
  7. Place half of the shredded cheddar and mozzarella cheese into the bottom of a greased 9×13-inch casserole dish.
  8. Layer the steamed broccoli on top of the cheese.
  9. Pour the beef and egg mixture over the broccoli.
  10. Sprinkle the remaining cheese on top.
  11. Bake the casserole in the preheated oven for about 25-30 minutes, or until it’s bubbly and the cheese is golden brown.
  12. Remove from the oven and let it cool for a few minutes before serving.
