Keto Ham and Cheese Cauliflower Mac

Ingredients:

  • 1 large cauliflower head, separated into bite-sized florets
  • 8 oz diced ham
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • (Optional) 1/4 teaspoon of red pepper flakes, crushed
  • Chopped fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Bring water to a boil in a big pot. Add the cauliflower florets and cook for 5-6 minutes or until they are just tender. Drain and set aside.
  3. Melt the butter over medium heat in a separate pan. Add the minced garlic and cook for about a minute until fragrant.

  7. Season the cheese sauce with salt, black pepper, and optional paprika and crushed red pepper flakes for a bit of heat.
  8. Pour the cheese sauce over the cauliflower and ham mixture in the pan, ensuring that everything is evenly coated.
  9. Place the mixture in a 9×13-inch baking dish that has been buttered.
  10. Bake in the preheated oven for 15-20 minutes or until the top is golden and bubbly.
  11. Before serving, garnish with chopped fresh parsley.
