Keto Butter Pecan Cake Recipe

Ingredients:

For the Cake:

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 cup granulated erythritol (or other keto-friendly sweetener of choice)

For the Frosting:

  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered erythritol
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped pecans (for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a 9-inch (23-cm) round cake pan with parchment paper and grease it.
  2. In a mixing bowl, combine the almond flour, coconut flour, granulated erythritol, baking powder, and salt.
  3. In a separate bowl, whisk together the melted butter, eggs, almond milk, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients and mix until you have a smooth cake batter. Fold in the chopped pecans.
  5. Pour the batter into the prepared cake pan and spread it out evenly.
  6. Bake in the preheated oven for about 30 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  7. Remove the cake from the oven and leave it to cool for about 10 minutes in the pan. After that, place it on a wire rack to cool entirely.
  8. Prepare the frosting while the cake cools. In a mixing bowl, cream together the softened butter and the sugar until it’s creamy and smooth. Gradually add the powdered erythritol and vanilla extract, continuing to beat until well combined.
  9. Once the cake is completely cool, spread the frosting evenly over the top of the cake.
  10. Garnish with chopped pecans.
