Keto Lasagna

Ingredients:

  • 1 lb ground beef
  • 1/2 lb Italian sausage, casings removed
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 1 24-ounce jar sugar-free marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups ricotta cheese
  • 1 large egg
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 medium zucchinis, thinly sliced lengthwise
  • Fresh basil leaves for garnish (optional)

  1. Preheat the Oven:
  • Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
  1. Prepare the Meat Sauce:
  • In a large skillet over medium heat, brown the ground beef and Italian sausage until fully cooked.
  • Add diced onions and minced garlic, cooking until onions are soft.
  • Stir in the sugar-free marinara sauce, oregano, basil, salt, and pepper. Allow the flavours to mingle for 10-15 minutes while simmering.
  1. Prepare the Cheese Mixture:
  • Combine ricotta cheese and egg in a mixing basin. Mix until well combined.
  1. Assemble the Lasagna:
  • Spread a thin layer of the beef sauce in a greased 9×13 inch baking dish.
  • Layer zucchini slices on top of the sauce.
  • Spread half of the ricotta mixture over the zucchini, followed by a layer of shredded mozzarella and grated Parmesan.
  • Repeat the layers until all ingredients are used, finishing with a layer of meat sauce and a generous sprinkle of mozzarella and Parmesan on top.
  1. Bake:
  • Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
  • Remove the foil and continue baking for another 15 minutes, or until the cheese is bubbling and brown.
  1. Serve:
  • Allow 10 minutes for the lasagna to rest before slicing.
  • Garnish with fresh basil leaves if desired.
