Introduction to Soto Ayam

Soto ayam is a clear chicken soup that is made with a variety of spices and ingredients. It is a hearty and comforting dish that is perfect for cold weather or when you need a pick-me-up. The soup is typically made with chicken, vegetables, and a variety of spices, including ginger, galangal, and lemongrass.

• 1 whole chicken (about 1 kg)
• 2 tablespoons of vegetable oil
• 1 onion, sliced
• 2 cloves of garlic, minced
• 1 inch of ginger, sliced
• 1 inch of galangal, sliced
• 2 stalks of lemongrass, bruised
• 1 liter of chicken broth
• Salt and pepper to taste
• 2 tablespoons of soy sauce (optional)
• 2 tablespoons of lime juice (optional)
• Chopped scallions and fried shallots for garnish (optional)

Cooking Instructions

To make soto ayam, you will need to start by preparing the chicken and spices. You will then need to cook the chicken and spices in a large pot of chicken broth. Here are the step-by-step instructions:

1. Clean and prepare the chicken by removing the giblets and neck. Cut the chicken into bite-sized pieces and set aside.
2. Heat the oil in a large pot over medium heat. Add the sliced onion and cook until it is translucent.
3. Add the minced garlic, sliced ginger, and sliced galangal to the pot. Cook for 1-2 minutes until fragrant.
4. Add the bruised lemongrass to the pot and cook for another minute.
5. Add the chicken to the pot and cook until it is browned on all sides.
6. Pour in the chicken broth and bring the mixture to a boil.
7. Reduce the heat to low and simmer the soup for 30-40 minutes until the chicken is cooked through.
8. Season the soup with salt, pepper, soy sauce, and lime juice to taste.
9. Strain the soup and discard the solids.
10. Serve the soto ayam hot, garnished with chopped scallions and fried shallots if desired.
