Overview of Soto Ayam

Soto Ayam is a classic Indonesian chicken soup that is both nourishing and delicious. This simplified recipe uses easy-to-find ingredients and straightforward cooking methods, making it accessible to cooks of all levels. The result is a flavorful and satisfying dish that is sure to become a staple in your household.

• 1 pound boneless, skinless chicken breast or thighs
• 4 cups chicken broth
• 2 medium potatoes, peeled and diced
• 1 large onion, chopped
• 2 cloves garlic, minced
• 1 tablespoon grated ginger
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1/2 teaspoon turmeric
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 2 tablespoons vegetable oil
• 2 stalks lemongrass, bruised
• 2 kaffir lime leaves
• Fresh cilantro, chopped (for garnish)

Cooking Instructions

1. In a large pot, heat the oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
2. Add the minced garlic and grated ginger and cook for another minute, stirring constantly to prevent burning.
3. Add the cumin, coriander, turmeric, salt, and pepper. Cook for 1-2 minutes, stirring constantly, until the spices are fragrant.
4. Add the chicken to the pot and cook until browned on all sides, about 5-7 minutes.
5. Add the chicken broth, diced potatoes, bruised lemongrass, and kaffir lime leaves to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the chicken is cooked through and the potatoes are tender.
6. Remove the chicken from the pot and shred or chop it into bite-sized pieces. Return the chicken to the pot and simmer for another 5 minutes, or until the flavors have melded together.
7. Taste and adjust the seasoning as needed. Serve the Soto Ayam hot, garnished with chopped cilantro and accompanied by your choice of sides, such as steamed rice or noodles.
