Ayam goreng tepung crispy, also known as crispy fried chicken, is a popular Indonesian dish that has gained worldwide recognition. The combination of crispy exterior and juicy interior makes it a favorite among many food lovers. In this recipe, we will guide you through the process of making ayam goreng tepung crispy at home.
To make ayam goreng tepung crispy, you will need the following ingredients:
- 1 kg chicken pieces (legs, thighs, wings, and breasts)
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1/2 cup ice-cold soda water
- 1/4 cup vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- Chilli sauce for serving (optional)
Now, let’s move on to the step-by-step cooking instructions:
- In a large bowl, combine the all-purpose flour, cornstarch, garlic, salt, black pepper, paprika, and cayenne pepper (if using).
- In a separate bowl, mix the ice-cold soda water and vegetable oil.
- Add the wet ingredients to the dry ingredients and mix until a smooth batter forms.
- Add the chicken pieces to the batter and mix until they are fully coated.
- Heat about 5-7 cm of vegetable oil in a deep frying pan over medium-high heat.
- When the oil is hot, add a few pieces of the chicken to the pan (do not overcrowd).
- Fry the chicken for about 5-7 minutes on each side, or until it is golden brown and crispy.
- Remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil.
- Repeat the frying process with the remaining chicken pieces.
- Serve the ayam goreng tepung crispy hot with chilli sauce (if desired) and enjoy!
